- 1/2 of 1 honeydew
- 2 tbsp shredded coconut
- 2 tbsp hemp seeds
- 2 cups kale, stems removed
- 1/4 cup old fashioned oats
- 1/4 cup coconut milk
- Combine ingredients in a blender and pulse until smooth.
- Transfer to a bowl and add your choice of toppings (I used 2 tbsp chia seeds, 5 strawberries and 1/4 cup shredded coconut).
